Today I have got another dip for you. This one is super easy and pairs great with unsalted potato chips or fresh cut veggies. A simple combination of goat cheese, sour cream, Herbs de Provence, fresh ground black pepper, and green onion come together to form a creamy, satisfying dip.
Herbs de Provence is a key ingredient of this dip and is one of my favorite spices. I use it often – it is great for dips, sauteed mushrooms, roasted vegetables, and more. It has a great savory flavor that is really wonderful in low sodium recipes (where we are always seeking more robust flavors to replace salt).
On a final note, Joe’s favorite unsalted potato chips are Tim’s Cascade – they are super crunchy and less greasy than some of the other options out there. Speaking of other options, we occasionally buy Kettle Brand Unsalted Potato Chips, which a good alternative if you can’t find Tim’s.

Ingredients
- 4 ounces goat cheese*
- 1/2 cup sour cream
- 2 green onions (thinly sliced)
- 1 tsp Herbs de Provence
- fresh ground black pepper (to taste)
- unsalted potato chips or fresh sliced vegetables (for serving)
Instructions
- Place the goat cheese and sour cream in a bowl and stir until it reaches a smooth consistency.
- Add the green onion, Herbs de Provence, and black pepper. Stir to combine.
- Serve with unsalted potato chips or fresh sliced veggies. Note that chips/veggies are not included in the nutritional value.

* The goat cheese I used had 40 mg sodium per ounce.

We like the dip to be very thick. If you prefer a thinner consistency, add a bit more sour cream. Remember that doing so will change the nutritional value.
