How many of you love camping? We do, but we don’t get out there nearly as much as we’d like. If you do too, I have a few tips for getting through a camping weekend while still enjoying food on the fire, keep reading.
Just this last weekend we decided to pack up and camp for the weekend. We had a great spot near a lake and hiking trails. Some of our favorite childhood memories of camping center around the fire – and food! Gone are the days when we could go camping with a pack of hot dogs, some buns, and a bottle of mustard.
What did we eat this weekend?
Snacks
Fruits and veggies were a must-have. We also packed unsalted tortilla chips, lower sodium Ritz crackers, and swiss cheese.
Burgers
Very simple, and can be cooked on a grill or on a griddle. Rather than eating a store-bought bun (which runs high in sodium), eat the burger wrapped in lettuce.
Hash (AKA Campfire Hodge Podge)
We started with cubed potatoes, chopped onion, and chopped green pepper in a dutch oven with a bit of oil. When the potatoes had browned and softened a bit, we added lean ground beef and black pepper. Very simple, very adaptable, and so, so good after a long day of camping.
Scrambled Eggs
For breakfast each day we scrambled eggs in a dutch oven over the fire. We added onion and a bit of Swiss cheese to dress them up a little.
Campfire Bannock
This was by far my favorite thing that we made this weekend. Before we left, I mixed up the dry ingredients for Bannock and put them in a ziploc baggie. Rather than pack milk for camping, I added 1/3 cup powdered milk to the dry ingredients in the baggie. Then, once we were out camping and ready to cook it, I put some of the dry mix in a bowl, added a bit of oil and water, and stirred. To cook, we heated oil in a dutch oven, pattied out the bannock dough, plopped it in the pan, and topped it with a lid. To keep the bannock from burning before it cooked through, I paid close attention and took it on and off the fire. Halfway through cooking, I flipped the bannock.
